PETER REFFELL - EXECUTIVE CHEF & FOOD &BEVERAGE MANAGER
“Let mother nature do the talking” is the catch-cry of infamous British chef and restaurateur Marco Pierre White. It’s a mantra Peter Reffell not only lived by for the ten plus years he worked with White, but one that would establish the foundations to create his own clean, seasonal, technically sophisticated yet unpretentious style of crafting exquisite food. Peter Reffell is from London in the UK and recently joined the Emirates Leisure Retail Group as Executive Head Chef. Peter is quickly securing his place as the chef to watch with diners savoring seasonal, local produce that is prepared to almost exaggerated levels of freshness and quality.
It’s a deliberate tactic to showcase the best in Australian produce and demonstrate that food needn’t be ‘over worked’ to be special and taste great. This philosophy comes from years of developing his cookery skills in an era when some of the true UK and French culinary legends were in their prime; Albert Roux, Pierre Koffman, , Marco Pierre White and Paul Bocuse, to name a few. Peter was privileged to learn firsthand from some of the Masters including Koffman and White. With 24 year under his belt, his career has been working for the best restaurateur in London, from Pierre Koffman at La Tante Claire 3 star Michelin to 10 years with Marco Pierre White as his Executive Head Chef for the group and responsible for opening 8 of the groups restaurant 4 of those which were awarded a Michelin stars.
From his own training, Peter believes that almost every aspiring chef must go on a journey from café to gastro, from molecular to bistro, from fine dining to Michelin, to find his or her own comfort zone and cooking style. This enables respect for technique, tradition and then the ability to be true to yourself in the kitchen. As executive Chef for ELRA, Peter develops all menus, sources all suppliers, and works with our suppliers on exclusive recipes for ELRA outlets. Peter uses his experience and the consistent mentality of offering fresh produce, unique flavours and hand made products for our network of stores.
ALBERT HTUN - RESTAURANT MANAGER
A well-seasoned Restaurant Manager who is passionate about delivering exceptional service with over 19 Years of Restaurant Management experience in the US and another 8+ years in the modern and fine dining cuisines in Australia. Albert’s career started in San Francisco Bay Area managing various concepts with the last position being the General Manager for Celebrity Chef Martin Yan overseeing 7 restaurants. Albert migrated to Australia in the second part of 2007 and continue to pursue his passion for hospitality by working at 3 Bistro in the Fortitude Valley.
In late 2010, Albert took over as the Restaurant Manager for acclaimed Queensland Chef David Pugh’s Restaurant Two in the heart of Brisbane CBD where his persistence pursuit of delivering excellent service has led his team to attain the honour of the Best QLD Fine Dining Restaurant, awarded by Savour Australia Restaurant & Catering Association in 2014. Albert has joined the Brisbane River Grill to lead a likeminded professionals to pursue in delivering an outstanding experience for its guests while educating them on the wonderful products and flavours of the great Sunshine State.
